Vegan Crepes
Ingredients
- — 1 1/2 cups all-purpose flour
- — 1 tbsp cornstarch
- — 1 tbsp granulated sugar
- — 1/4 tsp salt
- — 2 tbsp neutral oil (canola, refined coconut, or avocado)
- — 1 cup unsweetened soy milk
- — 1 cup sparkling or still water
- — Vegan butter for the pan

Whisk together flour, cornstarch, sugar, and salt. Add oil, milk, and water and whisk until smooth.

Heat a medium non-stick pan to medium. Add 1–2 tsp vegan butter, then pour in 1/3 cup batter and immediately rotate the pan to spread into a thin circle.

Cook until the top looks mostly dry (~2 minutes). Flip and cook 30 seconds more. Repeat with remaining batter.

Serve with lemon juice, powdered sugar, berries, or maple syrup. Roll or fold as desired.
Notes
- · Sparkling water makes them slightly lighter but still works fine with still water.
- · The first crepe almost always sticks or tears — that's normal, just eat it.
