Vegan Pancakes
Ingredients
- — 1 1/2 cups all-purpose flour
- — 1 tbsp baking powder
- — 1/2 tsp salt
- — 2 tbsp granulated sugar
- — 1 cup soy milk (or almond, oat, or coconut milk)
- — 1/2 cup water
- — 2 tbsp canola oil (optional)

Whisk together flour, baking powder, salt, and sugar in a large bowl.

Add milk, water, and oil. Stir until just combined — lumps are fine, don't overmix.

Heat a greased griddle or pan over medium-high. Drop ~1/3 cup batter per pancake. Cook until bubbles form, then flip and cook 1–2 minutes until golden.
Notes
- · Any non-dairy milk works. Oil is optional but gives a slightly richer result.
- · Serve with vegan butter, maple syrup, and fresh fruit.
